Harvest Pride® Canapes

  • 1-2 heads Belgian Endive (12 good leaves)
  • 3-4 ounce fresh goat cheese (not aged) or blue cheese
  • 2 tablespoon chopped chives
  • 1 teaspoon fresh lemon juice
  • 1/2 small fennel bulb, make 12 slices, finely chop the remainder
  • 12 Meduri World Delights Harvest Pride® peach slices
  • 2 tablespoon (1 oz.) chopped toasted almonds
  •  balsamic vinegar

So simple to make and so delicious. Your guests will really enjoy this unique treat. Makes 1 dozen. Separate the endive leaves and arrange them on a platter. Mix the goat cheese with the chives, lemon juice and chopped fennel bulb in a small bowl. Portion out the cheese mixture onto the leaves. Top each with a Harvest Pride® peach slice, garnish with fennel slices and toasted almonds. Drizzle each canape with a little balsamic vinegar.
